Agritourism (farm tourism) Cooperative of Women of the Trigono Municipality
The combination of the new economic conditions, i.e. EU funding and the pursuits of the women in the area, led to the foundation of ‘’Gaia’’, the agritourism Cooperative of the women of Trigono, on the 30th of September 1998.
The Cooperative consists of 52 members and the main activities concern mainly farm tourism. Their first business venture was the establishment and operation of the Local Delicacies Workshop in the village Canada in Trigono.
All of the products are home-made and prepared using traditional techniques and local farming ingredients.
A great part of the workshop’s activities concern the buffet preparation of the local products and the catering services provided for events like weddings, conferences, formal dinners and so on.
The quality of the products is ensured by the highest sanitation standards and the latest equipment that is used for the preparation and cooking.
The workshop currently employs 15 women- members of the Cooperative, 12 of which work in production and 3 in production management and promotion.
In the workshop you can find the following products:
- Local Thracean Trachanas (a mix of wheat and vegetable soup), sour or spicy
- Ifkadia (home-made pasta)
- Couscous
- Oumats (a mix of meal and yoghurt)
- Home- made jams from local forest berries (tsapurno-a kind of raspberry and krano- cornelian cherry)
- Ritseli (traditional jam preserve of ripe fig)
- Liqueur (tsapurno, krano, pomegranate, peppermint, morello cherry, etc)
- Traditional home made pastry and pies
